Healthy Coconut Energy Balls

We've all been there. You're travelling for a while when that familiar 'nibbly' feeling takes a hold. Let's face it, most of the time you just stop off at the nearest eye-wateringly expensive garage or motorway service station and grab yourself a packet of crisps and a chocolate bar. It certainly does the job for a while but isn't the healthiest choice and can leave you feeling a little guilty once the sugar- rush has passed.
These gorgeous little balls of yumminess can certainly fill that void when you're craving a quick, handy, tasty, yet healthy snack.
A friend of mine who runs wellness retreats gave me this recipe and it's been a staple on those long camper ( or car) journeys ever since, not to mention as a handy go-to snack to keep in the fridge whenever the munchies take a hold! They are super easy to make and contain only the simplest ingredients, so simple in fact that you will be left wondering how something so simple yet tasty can exist.

Date Energy Balls
Ingredients:
Cup of Medjool dates ( soaked for 20 mins in hot water then stones removed)
Cup of ground almonds
3/4 cup of grated coconut
1/2 cup cacao powder
coconut oil ( added until mixture comes together, around 1/4 cup)
Method:
Soak a cup of dates in boiling water for 5/10 mins until water cools. Poor water away and stone the dates.
Put dates, almonds, coconut, cacao powder and coconut oil into a mixer and mix to a firm paste
Roll into treat size balls and roll in coconut or sesame seeds
Put in fridge (or freezer for 10 mins) to cool.
Keep refrigerated and enjoy their healthy yumminess whenever that attack of the choco-munchies takes a hold!
You can add nut butter for extra nuttiness as well but as we have a peanut-allergy in our family, we keep it simple.
